  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chopped fresh rosemary
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions:

  1. In a medium-sized bowl, soak the dried porcini mushrooms in 2 cups of warm water for 20-30 minutes or until soft.
  2. Drain the mushrooms, reserving the soaking liquid. Chop the mushrooms and set aside.
  3. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until the vegetables are softened, about 5-7 minutes.
  4. Add the garlic and rosemary to the pot and cook for an additional 1-2 minutes, or until fragrant.
  5. Stir in the chopped porcini mushrooms, vegetable broth, reserved mushroom soaking liquid, and white beans. Bring the mixture to a boil, then reduce the heat to low and allow the soup to simmer for 20-25 minutes.
  6. Add the chopped kale or Swiss chard to the soup, and cook for an additional 5 minutes, or until the greens are wilted and tender.
