Ingredients:

  • 2 cups Mild Chili with Portabella Mushrooms
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 large bell pepper (any color), diced
  • 2 large portabella mushrooms, diced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can diced tomatoes
  • 1 cup vegetable broth or water
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, green onions, fresh cilantro, avocado, or tortilla chips

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the diced onion and cook for 4-5 minutes, or until it becomes soft and translucent.
  3. Add the minced garlic and diced bell pepper, and cook for an additional 3-4 minutes, or until the vegetables are tender.
  4. Stir in the diced portabella mushrooms, cooking for 5-7 minutes, or until the mushrooms release their moisture and begin to brown.
  5. Add the Mild Chili with Portabella Mushrooms to the pot, stirring well to combine with the sautéed vegetables.
  6. Mix in the black beans, kidney beans, and diced tomatoes with their juices.
  7. Pour in the vegetable broth or water and bring the chili to a simmer. If you prefer a thicker chili, use less liquid.
  8. Reduce the heat to low and let the chili simmer for at least 30 minutes, or up to 2 hours for a deeper, more developed flavor.
