This versatile, plant-based sauce boasts the rich, smoky taste of bourbon combined with the natural umami flavors of portabella mushrooms, creating an irresistible BBQ sensation that will impress vegans and meat-lovers alike. Ingredients:

  • 1 cup Bourbon Vegan Portabella BBQ Sauce
  • 4 large portabella mushrooms, cut into 1-inch cubes
  • 2 bell peppers (any color), cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • Salt and pepper, to taste
  • 8 wooden or metal skewers

Instructions:

  1. In a large mixing bowl, combine the olive oil, balsamic vinegar, and 1/2 cup of the Bourbon Vegan Portabella BBQ Sauce. Whisk the ingredients together to create a marinade.
  2. Add the cubed portabella mushrooms, bell pepper pieces, and red onion pieces to the marinade. Toss to ensure that the vegetables are evenly coated. Cover the bowl and let the vegetables marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more intense flavor.
  3. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning during the grilling process.
  4. Preheat your grill or grill pan to medium-high heat.
  5. Thread the marinated vegetables onto the skewers, alternating between portabella mushrooms, bell peppers, and red onions.
  6. Season the skewers with salt and pepper to taste.
