These scrumptious bites showcase the bold, tangy flavors of buffalo sauce, combined with the rich, earthy taste of portabella mushrooms, creating a delightful plant-based alternative to traditional buffalo wings. Ingredients:

  • 1 cup Vegan Buffalo Sauce with Portabella Mushrooms
  • 4 large portabella mushrooms, sliced into 1-inch thick strips
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup unsweetened non-dairy milk (such as almond or soy milk)
  • 1 tablespoon apple cider vinegar
  • 2 cups panko breadcrumbs
  • Cooking spray or oil
  • Vegan ranch or blue cheese dressing, for dipping

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a shallow dish or bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well to create the seasoned flour mixture.
  3. In another shallow dish or bowl, whisk together the non-dairy milk and apple cider vinegar to create a vegan buttermilk.
  4. Place the panko breadcrumbs in a third shallow dish or bowl.
  5. Dip each portabella mushroom strip first into the seasoned flour mixture, coating it evenly and shaking off any excess.
  6. Next, dip the mushroom strip into the vegan buttermilk, allowing any excess liquid to drip off.
  7. Finally, coat the mushroom strip in the panko breadcrumbs, pressing the breadcrumbs onto the strip to ensure an even, crispy coating.
  8. Place the breaded mushroom strip onto the prepared baking sheet and repeat the process with the remaining mushroom strips.
  9. Lightly spray or brush the breaded mushroom strips with cooking spray or oil to encourage browning and crispiness.
  10. Bake the mushroom bites in the preheated oven for 20-25 minutes, or until they are golden brown and crisp, flipping them halfway through the baking time.
